Servings
Ingredients
1 tsp ground cumin
1 tsp paprika, sweet, Hungarian
1 tsp ground coriander
0.5 tsp salt
0.25 tsp ground cloves
0.25 tsp ground red pepper (cayenne)
3 lb Lamb, rib, lean, raw, choice, 1/4" trim , 2 1.5-lb French-cut racks of lamb, 8 ribs each
1 cooking spray
6 cup Couscous, cooked
1 tbsp dried currants


Directions
1 Mix together the cumin, paprika, coriander, salt, ground cloves, and ground red pepper.
2 Rub spices over the lamb and let sit for 5 minutes.
3 Coat the rack of a broiler pan with cooking spray and arrange the lamb on the rack.
4 Bake for 25 minutes at 425 degrees F. Allow the lamb to sit for 10 minutes before slicing.
5 Mix the currants into the couscous.
6 Serve each plate with 3/4 cup couscous topped with 2 rib chops.
