Ingredients
2 lb pork tenderloin , 2 1-lb tenderloins
0.33 cup orange juice
2 tbsp molasses
1 tbsp fresh ginger root , grated
1 tsp ground coriander
1 fresh mango , peeled and diced
1 oz fresh mint , chopped
2 tbsp dried cranberries
1 tbsp seasoned rice vinegar
0.25 tsp hot red pepper flakes


Directions
1 In heavy-duty resealable plastic bag, combine pork, juice, molasses, ginger, and coriander. Then, seal bag and refrigerate for 4 to 24 hours. Remove pork from marinade and place in shallow roasting pan. Discard marinade.
2 Roast pork in a 450 degrees F oven for 20 to 25 minutes, until internal temperature reads 155 degrees F. Remove pork from oven; let rest for 5 minutes before slicing to serve with Mint Mango Relish.
3 Mint Mango Relish: In small bowl, stir together diced mango, mint, cranberries, rice vinegar, and crushed red pepper.
