Servings
Ingredients
1 tbsp instant coffee (or freeze dried)
0.25 cup cold water , hot
1 cup margarine , at room temperature
0.67 cup sugar
0.5 cup liquid egg substitute , or egg whites
2 tsp vanilla extract
2.5 cup white all purpose flour
0.33 cup unsweetened cocoa powder
0.5 cup sweetener (sugar substitute) (equal to 1/2 cup of sugar)
1.5 tsp low sodium baking powder
0.75 cup seedless raisins
1 tsp cooking spray


Directions
1 Preheat oven to 375 degrees F. Spray a cookie sheet with cooking spray and set aside.
2 Mix coffee and water together well and set aside.
3 Mix sugar and margarine until light and fluffy.
4 Add egg whites or egg substitute and vanilla together until smooth.
5 Add the coffee and mix together with egg mixture at a medium speed until blended.
6 Sift together flour, cocoa, sweetener, and baking powder. Add to the liquid ingredients a little at a time until well blended.
7 Stir in raisins, by hand, until evenly mixed.
8 Drop dough by the 1 1/2 tablespoons onto prepared cookie sheet.
9 Dip your fingers into cold water and push down lightly on each mound of dough to flatten slightly.
10 Bake cookies for about 12 minutes.
11 Take cookies out of the oven and let them cool to room temperature.
