Directions
1 Chop the peppers, onion, squash and carrot into 1/2-inch pieces. Coat the grill with cooking spray and preheat for 5 minutes.
2 Combine the oil, lemon juice, pepper and salt in a small bowl.
3 Place the vegetables on the grill and sprinkle with the oil and lemon seasonings. Grill for 6-8 minutes, or until vegetables are tender-crisp.
Additional Information
Serve with chicken or beef. If you can find purple onions, use them!
