Ingredients
1 cup baby carrots
1 butter flavored cooking spray
1 Oranges, navels, fresh, 2 7/8" , peeled and separated into sections
1 oz fresh mint , chopped


Directions
1 Place the carrots in boiling water and cook for 4 to 5 minutes; drain.
2 Spray a nonstick sauté pan with the cooking spray. Sauté the carrots for 1 minutes over medium heat.
3 Add in the oranges and squeeze the juice into the pan. Increase the heat to high and mix in the mint. Cook until all of the juice has evaporated, approximately 1 minute.
Additional Information
Try adding to a salad.
