Directions
1 Cut the beef into 1/8-inch strips crosswise and place each strip into a large resealable plastic food storage bag. In a cup combine the soy sauce, sherry, oil, and garlic and pour mixture over steak, then seal the bag and turn to coat the beef.
2 Marinate the beef in refrigerator for at least 30 minutes or up to about 2 hours.
3 Take 18 6-inch skewers and soak them for 20 minutes in water.
4 Drain the steak in the bag and throw away the marinade, then weave the beef strips onto the skewers accordion style and place them on the rack of a broiler pan.
5 Broil the beef skewers for 2 minutes keeping them 4 to 5 inches away from the heat, then turn the skewers over and broil for an additional 2 minutes or until the beef is barely pink.
6 If you wish garnish each beef skewer with a cherry tomato, then place on lettuce-lined platter and serve warm.
