Apple Mixture
2 medium apples , peeled, cored, and sliced
1 tbsp cold water
6 tbsp apple cider , (or apple-flavored tea)
0.12 tsp ground cinnamon
0.5 tsp Margarine, 80% fat, unsalted , melted
1 pinch sweetener (sugar substitute) (to taste )

Topping
2 tbsp Cheese, ricotta, low fat, Frigo , drained
1 tbsp plain nonfat yogurt
1 tsp vanilla extract
1 tsp SPLENDA® No Calorie Sweetener, granulated
1 tbsp chopped walnuts (optional )


Directions
1 Combine all ingredients for the apple mixture in a 2 quart casserole, tossing well.
2 Cover with wax paper and microwave on high for a total of 5 minutes or until tender, stirring every minute or so.
3 Let stand covered for 2 minutes to finish cooking.
4 Whisk topping ingredients together using a wire whisk.
5 Top each serving with 1 1/2 tablespoons of the cheese mixture, and sprinkle with ground nuts and cinnamon. Serve hot or cold.
