Ingredients
1.5 cup cold water
0.75 cup Rice, brown, long grain, dry
1 lb boneless skinless chicken breasts , rinse and pat dry (four, 4-ounce breasts)
1 tbsp fresh lime juice
0.75 tsp ground cumin
0.25 tsp salt
4 oz Chili Peppers, green, dices, canned
1 small tomato , seeded and diced
0.25 cup fresh cilantro , leaves, chopped
1 cup shredded mozzarella cheese


Directions
1 Preheat the oven to 400°F.
2 In medium saucepan, bring water to boil. Add rice, reduce heat, cover, and simmer 25 minutes or until all water is absorbed.
3 While rice is cooking, place chicken breasts in 9" x 13" baking pan. Cover chicken with lime juice, cumin, salt, and green chilies. Place tomato, cilantro, and cheese on top.
4 Bake 22 minutes or until juices run clear when pierced with fork. Transfer rice to serving platter and place chicken on top.
