Servings
Ingredients
1 lb small scallops
8 medium limes , juiced
2 medium tomatoes , diced
5 fresh green onions , minced
2 medium celery stalk , sliced
0.5 chopped green bell peppers , minced
0.5 cup chopped parsley
1 pinch black pepper
1.5 tbsp olive oil
0.12 cup fresh cilantro , chopped


Directions
1 Rinse scallops and place in a medium sized bowl.
2 Pour lime juice over the scallops. The scallops should be completely immersed in the lime juice.
3 Chill the lime juice and scallops all day or overnight until scallops are opaque.
4 Empty 1/2 of the lime juice from the bowl.
5 Add tomatoes, green onions, celery, green bell pepper, parsley, black pepper, olive oil, and cilantro to the scallop mixture.
6 Stir gently, serve immediately.
