Ingredients
24 oz salmon fillet ( 4 (6-ounce) fillets)
0.75 tsp lemon pepper seasoning
0.75 tsp dried dill weed
0.25 tsp salt
0.5 cup Tomatoes, sun dried , coarsely chopped
2.25 oz canned black olives , drained and sliced
2 oz Cheese, feta, basil & tomato, crumbles
2 oz pine nuts , toasted


Directions
1 Preheat oven to 400 degrees F.
2 Lay each fillet on a 16 by 12 inch piece of aluminum foil. Season both sides with lemon pepper, dill, and salt. Lay tomatoes on top of fillets followed by olives, feta, and pine nuts. Fold sides of foil up to form a sealed pouch. Lay packages, seam side down on a baking sheet.
3 Bake 18 to 20 minutes or until fish is flaky. Open packages tableside.
Additional Information
If your sun-dried tomatoes are packed in oil, be sure to drain and pat dry with a paper towel before using, or better yet, use tomatoes not packed in oil.
