1 Toast bread and spread with olive tapenade.
2 Heat a skillet on medium-high heat and spray with olive oil spray.
3 Mix egg substitute with Parmesan cheese and pepper to taste. Pour into pan and cook for 2-3 minutes or until eggs are set. Serve on toast.
