Directions
1 In a 2-quart saucepan, bring chicken broth and half & half to a full boil. Turn off heat.
2 Stir in instant potatoes until moistened. Let sit for 30 seconds, or until all liquid is absorbed.
3 Mash whole potatoes in a serving bowl into tiny chunks. Microwave potato chunks for up to 2 minutes, or until potato chunks are fully heated.
4 Stir instant mashed potatoes, warmed potato chunks, sour cream and all but 1 teaspoon chives together in serving bowl until well blended.
5 Sprinkle reserved 1 teaspoon of chives on top.
