Ingredients
3 lb boneless pork loin
1 cup tequila, 80 proof
2 cup fresh lime juice
0.5 cup olive oil
3 medium garlic cloves , crushed
0.12 tsp salt

Rub
1 tbsp lime peel zest , grated
1 tbsp ground oregano
1 tbsp black pepper
1 tbsp brown sugar
1 tsp ground thyme
0.5 tsp kosher salt
0.12 tsp ground allspice


Directions
1 Place pork in large self-sealing bag; combine tequila, lime juice, oil, garlic, and salt in medium bowl and pour over pork. Seal bag; refrigerate 24-48 hours.
2 Remove pork from bag, discarding marinade. Pat pork dry. Heat oven to 350 degrees F. Combine remaining ingredients in small bowl, and pat rub mixture over all surfaces of pork.
3 Place pork in shallow roasting pan; roast for 1 to 1-1/2 hours, until internal temperature registers 150-155 degrees F. Let rest 10 minutes before slicing to serve.
