Servings
Ingredients
1 cup fresh lime juice (or margarita drink mix)
4 tsp sugar
0.5 tsp salt
1 tsp ground coriander
1 medium garlic cloves , minced
1 lb pork tenderloin , cut into 10 inch cubes
2 tbsp Margarine, 80% fat, unsalted , melted
1 tbsp chopped parsley
2 tsp fresh lime juice
0.12 tsp sugar
1 large green bell peppers , cut into 1-inch cubes
2 Corn, cob, large , cut into 8 pieces


Directions
1 To make the marinade, in a small bowl combine margarita mix or lime juice, sugar, and salt with coriander and garlic.
2 Place pork cubes inside a large resealable plastic food storage bag and pour marinade over pork in bag.
3 Securely close bag and turn to coat pork.
4 Marinate pork in bag for at least 30 minutes.
5 In a small bowl combine margarine, parsley, lime juice, and sugar and set mixture aside.
6 Take four skewers and alternately thread pork cubes with pieces of bell pepper and corn.
7 Grill kabobs for 15 to 20 minutes over hot coals until center is barely pink.
8 Baste kabobs with margarine mixture while grilling and turn kabobs frequently.
