Ingredients
2 lb fresh green beans , ends trimmed
2 tbsp dijon mustard (coarse grain)
3 tbsp balsamic vinegar
1.5 tbsp maple syrup
2 tsp extra virgin olive oil
2 tbsp fresh chopped green onion (including green top)
1 pinch salt and pepper


Directions
1 Boil 2 quarts of water in a pot over high heat. Pour in beans and cook 5 to 8 minutes or until tender-crisp. Strain and pour into a serving bowl.
2 Whisk together mustard, vinegar, syrup, and oil. Spoon mixture over hot beans and top with onion. Sprinkle with salt and pepper.
Additional Information
Up to 2 days ahead, make and chill maple-mustard sauce. One day ahead, cook beans; drain and immerse at once in ice water until cold. Drain again, wrap airtight, and chill. To reheat, immerse beans in boiling water to cover, remove from heat and let stand about 1 1/2 minutes, then drain. Or put beans in a microwave-safe bowl and reheat, uncovered, in a microwave oven until steaming, 2 to 4 minutes.
