Ingredients
1 tbsp olive oil
2 medium celery stalk , diced
2 medium onions , chopped
2 medium garlic cloves , minced
56 oz Tomatoes, whole, peeled, unsalted, canned
0.5 cup white wine
1 tsp dried basil
1 tsp oregano leaves , dried
0.5 tsp ground thyme
0.5 tsp black pepper , freshly ground
0.25 tsp salt
2 lb flounder fillet , cut into 1 inch pieces (or sole)
0.5 cup chopped parsley , minced


Directions
1 Heat oil in large nonstick pan.
2 Add celery, onions, garlic, cook until soft -- about 5 minutes. Stir occasionally.
3 Add in tomatoes, wine, basil, oregano, thyme, pepper, and salt. Bring to a boil.
4 Simmer, covered for 25 minutes.
5 Raise heat and add in fish and parsley. Bring to a boil.
6 Lower heat and cook uncovered for about 5 minutes. Fish should be opaque.
