Ingredients
1.5 cup fresh diced pineapple
0.25 cup chopped red bell peppers
0.25 cup chopped green bell peppers , finely chopped
2 tbsp fresh cilantro , chopped
2 tbsp fresh lime juice , divided
0.5 tsp hot red pepper flakes
0.5 tsp lime peel zest
1 cooking spray
16 oz mahi mahi fillets (4, 4-oz fillets )
1 tbsp olive oil
0.5 tsp white pepper


Directions
1 To prepare the salsa, take a medium bowl and combine pineapple, red and green peppers, cilantro, 1 tablespoon lime juice, red pepper flakes, and lime peel. Set salsa aside.
2 Preheat the broiler and spray the rack of broiler pan with cooking spray. Rinse the mahimahi, pat dry with paper towels, and place on rack of broiler. Combine the remaining 1 teaspoon lime juice with the olive oil and brush on mahimahi.
3 Broil the fish for 2 minutes, cooking 4 inches from heat, then turn and brush other side with olive oil mixture and sprinkle with white pepper. Continue to broil the mahimahi for 2 minutes or until fish flakes when tested with a fork. Serve with pineapple salsa.
