Directions
1 Pre-heat the broiler or grill.
2 Mix the oil, 1 tablespoon of the rice vinegar and garlic, salt and pepper together.
3 Slice fish into strips about 1/2 inch thick and 4 inches long. Place in the marinade and set aside for 10 minutes, turning after 5 minutes to make sure all sides are marinated.
4 Remove the fish from marinade and thread the fish strips on to the skewers. Place on a broiler pan or on the grill and cook, turning in 2 minutes.
5 In a small bowl, mix peanut butter, soy sauce and remaining 1/2 tablespoon rice vinegar together until blended to a smooth consistency. Add sugar substitute and hot pepper sauce.
Additional Information
If using wooden skewers, be sure to soak them in water for about 30 minutes before use. This keeps them from burning.
