Ingredients
0.5 cup macaroni, uncooked
0.75 cup chopped red bell peppers
0.5 cup fresh cucumber, peeled and chopped
0.5 cup shredded carrots
0.25 cup fresh chopped green onion
6 cup tap water

Blue Cheese Dressing
0.5 cup mayonnaise
1 oz blue cheese , crumbled
1 tbsp red wine vinegar
1 tsp celery seeds
0.5 tsp salt
0.12 tsp ground cayenne (red pepper)
0.12 tsp black pepper


Directions
Macaroni
1 In medium saucepan, over high heat, bring water to boil. Add pasta, cook 7 minutes or until just tender. Reduce heat as necessary to prevent boil over.
2 Drain pasta and allow to cool to room temperature.
3 Toss macaroni, pepper, cucumber, carrots, and green onions.
Blue Cheese Dressing
1 Whisk mayonnaise, blue cheese, vinegar, celery seeds, salt, and pepper.
2 Toss with macaroni salad. Cover and chill 30 minutes. Serve.
Additional Information
Be sure to cook the pasta "al dente" -- just till it's soft but still chewy. This significantly lessens the impact of these carbs on your blood sugar. Better yet, try a low carb pasta product instead of regular pasta.
