2 tbsp olive oil
1 large green bell peppers , cut into strips
2 medium garlic cloves , minced
31 oz canned black eyed peas , 2 - 15.5 oz. cans (rinsed and drained)
0.5 tsp hot red pepper flakes , crushed


Directions

1 Add oil to a large nonstick skillet over medium-high heat. Add green pepper and sauté approximately 10 minutes. Add garlic and sauté 30 seconds.
2 Add black-eyed peas and red pepper flakes and sauté 5-10 more minutes.
