1 Preheat oven to 350 degrees F. 2 Lightly spray a 9 x 5 inch loaf pan with nonstick cooking spray. 3 Mix the flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl, add raisins. 4 In a separate bowl mix the egg whites and applesauce with an electric mixer, until well mixed. 5 Pour egg mixture over the dry ingredients and mix to combine. 6 Spoon into loaf pan and bake until toothpick inserted into the center comes out clean, about 70-80 minutes. 7 Remove from oven and cool pan for 10 minutes, then remove bread from loaf pan and cool completely on a rack.
Additional Information
Replace the raisins with chopped dates and the the cinnamon with ground ginger or nutmeg for a tasty change.
