6 oz unsalted tomato paste
0.5 cup red wine
0.5 cup cold water
1 tsp minced garlic
0.5 tsp ground basil leaves
0.5 tsp oregano leaves
0.25 tsp salt , to taste (optional)
12 oz ground beef (5% fat)
12 oz ground turkey
1 cup bread crumbs , fresh (whole wheat)
0.5 cup chopped zucchini , finely
0.25 cup egg substitute, liquid (or 2 egg whites)


Directions
1 Preheat oven to 350°F.
2 Combine tomato paste, wine, water, garlic, basil, oregano, and salt in small saucepan.
3 Bring to boil. Reduce heat to low. Simmer, uncovered for 15 minutes.
4 Remove from heat and set aside.
5 In large bowl, combine beef, turkey, bread crumbs, zucchini, egg substitute, and half of tomato mixture. Mix well.
6 Shape into loaf in ungreased 9" x 5" x 3" inch loaf pan.
7 Bake 45 minutes.
8 Discard any drippings.
9 Spread remaining tomato mixture on top of meat. Bake for additional 15 minutes.
10 Turn meatloaf out onto serving platter. Let cool 10 minutes before cutting into 8 slices.
