Ingredients
0.75 cup white all purpose flour
0.5 tsp baking soda
0.5 tsp ground cinnamon
0.25 tsp salt
0.5 cup fat substitute (such as Baking Healthy)
0.5 cup sweetener (sugar substitute) ,
0.25 cup brown sugar substitute, granulated , such as Brown Sugar Twin
0.25 cup packed light brown sugar
1 kg eggs
0.25 cup fat free milk
1 tsp vanilla extract
1.5 cup old fashioned rolled oats
0.5 kg seedless raisins
0.5 cup chopped walnuts , optional


Directions
1 Preheat oven to 350 degrees F.
2 Mix together in a small bowl the flour, baking soda, cinnamon and salt.
3 In a large bowl, using an electric mixer, beat together the fat substitute, sugar substitute, brown sugar substitute, and brown sugar just until creamy, about 30 seconds.
4 Beat in the egg, milk, and vanilla extract.
5 Stir in the flour mixture. Stir in the oats, raisins and walnuts (optional).
6 Drop by well-rounded tablespoons onto ungreased cookie sheets, flattening the mounds slightly so the cookies will spread.
7 Bake until golden brown, about 10 minutes.
Additional Information
When using fat-free fruit-based oil and shortening replacement, don't overbeat or your cookies will come out tough and chewy.
