1 In a small bowl, using a fork, beat the eggs together with the seltzer. Add the matzoh meal, soy or regular flour, almond flour and salt and pepper. 2 Mix until smooth. Refrigerate the mixture at least 1/2 - 1 hour. 3 Wet hands, form small balls and drop them into boiling liquid. 4 Boil for 10 minutes. Flip them to their other side with a fork after 5 minutes.

Knaidlach can be boiled in 3-4 cups salted water or in soup, which will make them more tasty.
