Ingredients
1 small tomato , about 11/2-inches
0.5 oz Cheese, pepper jack , shredded, approximately 1 tbsp
0.25 tsp sliced almonds , coarsely crumbled
1 pinch chopped parsley


Directions
1 Preheat oven to 350 degrees F.
2 Remove a 1/4-inch slice from top side of tomatoes. Remove pulp and place upside down on paper towels to drain.
3 Form cheese into a sort of ball and fill tomato. There should be a slight mound above the tomato. Sprinkle with almonds and parsley.
4 Bake 5 minutes to melt cheese. Don't overcook or the tomatoes will be too soft.
