Ingredients
1 lb boneless skinless chicken breasts , cut diagonally into thin slices
2 tsp extra virgin olive oil
2 medium shallots , thinly sliced
2 oz chopped green bell peppers , diced
1 tbsp curry powder
2 medium limes , the juice from them
0.25 cup lowfat plain yogurt
3 parsley sprigs , to garnish (optional)
1 tbsp sliced almonds , slivered, to garnish (optional)


Directions
1 Heat the oil in a nonstick saucepan and saute the shallots. Cook the bell pepper until they become tender. Mix in the curry powder.
2 Stir in the chicken and stir fry until there is no pink in the center. Mix in the lime juice.
3 Once ready to serve, add the yogurt. Garnish with the parsley and almonds, if desired.
