Servings
Ingredients
1 tbsp olive oil
1 yellow onion , coarsely chopped
3 medium garlic cloves , chopped
0.5 tsp ground thyme (or 1 tsp fresh, chopped)
3 cup fat free reduced sodium chicken broth
1 medium carrots , peeled and diced
3 cup Beans, lima, fordhook, frozen , thawed
0.5 lb Turkey, breast, smoked, lemon pepper flavor, 97% fat free sliced , cut into 1/4 inch dice sized pieces
1 tbsp fresh chopped green onion , including tender green parts


Directions
1 Heat oil in a large pot over medium high heat and add yellow onion. Sauté until soft, about 3 minutes. Add in the garlic and thyme and cook for an additional minute (do not let the garlic brown.)
2 Add in the broth and carrots and bring to a boil. Stir in beans and turkey. Lower heat, cover, and simmer until beans are heated through, about 5 minutes. If soup gets too thick add hot water or extra broth to thin.
3 Serve topped with green onions.
Additional Information
If you prefer working with dried beans you can replace the frozen for 1 cup of the dried.
