Servings
Ingredients
3 cup Beans, lima, large, mature, cooked , drained and liquid reserved
2 medium garlic cloves , pressed
0.25 cup fresh lemon juice
2 tbsp fresh dill weed , minced
1 tbsp fresh mint , chopped
1 tsp olive oil
0.33 cup fresh chopped red onion , minced
1 pinch salt and pepper (to taste)


Directions
1 In a blender or food processor, puree the limas, garlic, lemon juice, dill, and mint. If needed add about ¼ cup of the reserved bean liquid to aid in the pureeing.
2 Add the olive oil and process until smooth and creamy. Fold in the red onions by hand and add the salt and pepper.
3 Serve at room temperature or chill for at least an hour and serve cold.
Additional Information
This is a great dip served with crackers, pita, crudites, or steamed artichokes.
