Directions
1 Preheat oven 350 degrees F.
2 Spray a 8 1/2 x 4 1/2 x 3 inch loaf pan with baking spray.
3 In a medium bowl, beat margarine with an electric mixer at medium speed until creamy.
4 Still using the electric mixer at medium speed, slowly add in the 2/3 cup of sugar until light and fluffy, about 5 minutes.
5 Add egg substitute, lemon rind, and vanilla, and beat until well mixed.
6 In a separate bowl, combine the flour, baking powder, baking soda, and salt.
7 Alternately add the flour mixture with the yogurt to the margarine mixture, beating at low speed after each addition until blended.
8 Pour into loaf pan and bake until toothpick inserted into the center comes out clean, about 55 minutes. Remove from oven and place pan on cooling rack.
9 In a small pot, mix the 1/2 cup of sugar and lemon juice, bring to a boil, continue boiling for 1 minutes, remove from heat.
10 Using a meat fork, pierce top of bread several times. Pour lemon mixture from pot evenly over bread, cool in pan another 10 minutes. Remove bread from pan and cool completely. Slice into 16 slices.
