Ingredients
2 lb round tip roast
0.5 cup fresh lemongrass , chopped, peeled
0.33 cup shallots, chopped
3 tbsp fish sauce
1.5 tbsp sugar
1 tsp sesame oil , dark
1 tsp peanut oil
0.25 tsp salt
6 medium garlic cloves , crushed
2 serrano chili peppers , seeded and chopped
1 cooking spray


Directions
1 Wrap roast in plastic wrap and place in freezer for 30 minutes. Take beef out of plastic wrap and slice into 1/8-inch thick pieces.
2 Using a food processor or blender puree lemongrass, shallots, fish sauce, sugar, sesame oil, peanut oil, salt, garlic, and chiles until smooth. Pour mixture into a large resealable plastic bag; add meat; seal and chill for 2 to 4 hours.
3 Preheat grill.
4 Take beef out of bag and lay on a cooking spray coated grill rack. Cook 1 minute per side or until preferred degree of doneness.
Additional Information
Freezing the beef makes slicing it easier. Cooked beef can be made up to 2 days in advance.
