Directions
1 Preheat oven to 400°F.
2 Trim any excess fat from pork.
3 In small bowl, mix lemon rind, salt, cumin, pepper, and garlic. Massage spice mix onto surface of pork, on all sides. Place pork in large baking dish. Pour broth around pork.
4 Cook 30 minutes, turn pork over and cook another 35 minutes or until a meat thermometer reads at least 160°F. Discard broth and serve.
