1 Preheat oven to 375 degrees F.
2 Place chicken on a rack in roasting pan. 3 Combine margarine with lemon zest.
4 Add a little salt and pepper. Loosen the skin from the breast area and spread half the mixture under the skin. Rub remaining mixture over the chicken.
5 Bake 1 to 11/2 hours or until leg-thigh registers 170 degrees F, brushing occasionally with pan juices. 6 Remove skin before serving.
