3.5 cup fat free reduced sodium chicken broth , fat free chicken broth
0.25 cup quick cooking brown rice
2 medium garlic cloves , minced
0.25 cup fresh lemon juice
1 eggs , lightly beaten
2 tbsp chopped parsley , finely chopped
1 pinch white pepper (optional)
1 pinch salt (optional)


Directions
1 In a medium size pot, bring chicken broth to a boil then add in the rice and garlic.
2 Reduce heat, cover and simmer until rice is tender, about 20 minutes.
3 In a small bowl, mix the lemon juice and egg then slowly stir into soup.
4 Add in parsley, season to taste with salt and pepper (optional).
Additional Information
This is a very versatile recipe, so many things could be added like chicken and any assortment of vegetables you choose.
