1 In a medium size pot, bring chicken broth to a boil then add in the rice and garlic. 2 Reduce heat, cover and simmer until rice is tender, about 20 minutes. 3 In a small bowl, mix the lemon juice and egg then slowly stir into soup. 4 Add in parsley, season to taste with salt and pepper (optional).
