1 Preheat oven to 400 degrees F. 2 In a large bowl, mix the oat bran, flour, baking powder, baking soda, sugar, lemon peel, and poppy seeds. Make a well in the center of the mixture. 3 In a separate bowl, mix the yogurt, buttermilk, egg substitute, oil, vanilla extract, and lemon extract; add to the well of the dry ingredients and mix until just moistened. 4 Spray nonstick cooking spray into a muffin pan, fill 3/4 full with batter and bake until lightly browned, about 20-22 minutes. Remove muffins from tray and let cool on a wire rack. 5 In a small cup or bowl, mix the powdered sugar with the lemon juice and stir well. Drizzle over warm muffins.
Additional Information
One large lemon is all you need to get 1 tablespoon of peel and 1 tablespoon of juice.
