Ingredients
4 red snapper , 6 ounce fillets
0.25 cup fresh lemon juice
0.5 tsp ground cayenne (red pepper)
0.5 tsp black pepper
1 tsp dry mustard
1 tsp onion powder
1 cup ground thyme
1 cooking spray
1 medium lemons , cut into wedges


Directions
1 Situate the fish in a shallow dish and slowly pour the lemon juice on the fish. Let sit for about 5 minutes.
2 Mix together the peppers or pepper blend, mustard, powder, and thyme. Take the fish out of the lemon dish and throw away the juice. Coat both sides of the fish with the pepper mixture.
3 Light the grill and spray the rack with the cooking spray.
4 Grill, covered, for about 3 minutes then turn over and grill for another 3 minutes. Serve with the lemon wedges on the side.
Additional Information
A black and red pepper blend, such as McCormick's Red Hot Pepper blend, can be used instead of the individual peppers, .
