1 Coat grill rack with cooking spray. Preheat grill to medium-high. 2 In large bowl, combine parsley, lemon juice, oil, garlic, Italian seasoning, black pepper, and salt. 3 Add peppers, mushrooms, and onion. Toss to coat well. (The mixture can be prepared ahead to this point and refrigerated for up to 2 days.) 4 Place vegetable basket or grill screen on grill rack, place vegetables on basket or screen. Place on grill. 5 Grill, turning often, 15 minutes or until mushrooms tender and lightly charred.
