2 fresh lemons
24 oz raw halibut fillets
0.25 cup bread crumbs , use whole grain, if available
1 pinch kosher salt (or sea salt, optional)
1 pinch black pepper , ground (or white pepper, optional)
1 cooking spray


Directions
1 Before you begin, preheat your oven to 375 degrees F. Then, wash 1 lemon and cut it into thin slices. Grate roughly 1 tablespoon of zest from the second lemon, then juice it. In a small bowl, combine the grated zest and bread crumbs, mixing well. Set aside.
2 Next, put the lemon juice in a shallow dish and in the bottom of a baking dish that has been greased with cooking spray, arrange the lemon slices evenly. Then, dip the fish pieces in the lemon juice and set them on top of the lemon slices in the baking dish.
3 Spread the bread crumb mixture evenly over the fish, along with the salt and pepper, if desired.
4 Bake for about 10 to 15 minutes, or until the crumbs are lightly browned and the fish is just opaque. Serve immediately.
Additional Information
If you have thicker fillets, they may require a longer baking time.
