Ingredients
Chicken Ingredients
1 medium lemons
1 tbsp extra virgin olive oil
0.5 tsp salt
0.25 tsp black pepper
0.12 tsp sugar
1.5 lb chicken tenders

Sauce Ingredients
0.67 cup chopped parsley (flat leaf)
2 tbsp extra virgin olive oil
1 tbsp shallots, chopped (about 1/2 shallot)
1 tbsp white wine vinegar
0.25 tsp salt
0.25 tsp black pepper
2 tbsp fresh lemon juice
1 medium lemons , sliced (for garnish)


Directions
1 Preheat grill.
2 Zest the whole lemon (yellow part only) and add to a large mixing bowl. Mix in about 3 tablespoons of lemon juice, oil, salt, pepper, and sugar.
3 Lay chicken in marinade, fully covering both sides. Let rest for 15 minutes.
4 Meanwhile, for sauce, puree parsley, oil, shallot, vinegar, salt, pepper, and lemon juice in a blender or food processor until there are no lumps. Reserve.
5 Take chicken out of marinade and arrange on hot grill. Cook 4 minutes, turn chicken and cook another 3 to 5 minutes, chicken should be fully cooked through to the center.
6 Arrange chicken on a serving platter, spoon sauce over or serve on the side. Garnish with lemon wedges.
Additional Information
There will probably be sauce leftover, save in refrigerator and use for salmon or shrimp.
