8 cup cold water , divided
12 tea bags (or 3 family size tea bags)
0.25 cup fresh mint , leaves (about 1 sprig)
0.75 cup sugar
0.25 cup fresh lemon juice
1 fresh lemons , 8 slices (optional)
0.25 cup fresh mint , leaves (or 8 sprigs, optional)


Directions
1 Boil 4 cups of water in a medium pot. Place teabags and mint in water and let stand for 10 minutes. Throw away tea bags and mint when finished.
2 Mix together sugar and lemon juice in a glass-measuring cup. Pour in 1/2 cup hot tea mixture and blend until sugar dissolves. Pour the mixture into a pitcher and add the rest of the hot tea. Stir in 4 cups cold water. Top each glass with lemon slices and mint leaves (sprigs).

Serve this very well chilled or over ice.
