2 lb pork tenderloin
4 tbsp chili powder
0.25 tsp ground cloves
2 tbsp paprika
3 tsp crushed garlic
1 tsp ground oregano , dried
2 tbsp cider vinegar
1 tsp kosher salt (optional)


Directions
1 Trim all fat from pork. Cut into large chunks.
2 In food processor, grind to desired consistency.
3 Add chili powder, cloves, paprika, garlic, oregano, cider vinegar, and salt. Mix well.
4 Store sausage, in airtight container for 4 days before cooking. Can be stored up to 3 months in freezer.
