Ingredients
1 cup part skim ricotta cheese
0.25 lb firm tofu , mashed
3 tbsp grated Parmesan cheese
1 tsp ground oregano
1 tsp dried basil
1 tsp ground thyme
1 pinch salt and pepper (to taste)
2 cup low sodium marinara sauce
6 oz Pasta, lasagna, semolina, dry, package , cooked according to package directions, drained, and rinsed under cold water (6 noodles)
0.5 cup part skim shredded mozzarella


Directions
1 Preheat the oven to 400 degrees F.
2 In a medium-size mixing bowl combine all the filling ingredients. Spread 1 cup of the sauce in the bottom of a square, 8-inch baking dish.
3 Place the cooked lasagna noodles on a clean surface or cutting board, and spread some of the filling on top of each. Roll up the lasagna jelly-roll style and place each roll seam side down in the baking dish. Spoon the remaining sauce over and top with the mozzarella cheese.
4 Cover with foil and bake for 20 minutes. Remove the foil and continue to bake about 15 minutes until the sauce is bubbly and the cheese has melted. Serve immediately.
Additional Information
Some of the new low-carbohydrate pastas are quite good. Give one a try for this dish.
