Ingredients
1 Cooking Spray, canola water base, 1/3 sec spray
0.12 tsp salt
0.12 tsp dried basil
0.12 tsp black pepper
0.33 medium tomatoes , 2 1/4 inch slices
0.25 medium onions , 2 1/8 inch slices
4 lean lamb loin chops , trimmed


Directions
1 Heat a cooking spray coated grill pan over medium-high heat.
2 Mix salt, basil, and pepper. Using half the mixture, season tomato and onion. Massage lamb with the other half.
3 Arrange tomato, onion, and lamb on grill pan. Grill tomato and onion 2 minutes per side and grill lamb 8 minutes per side or until preferred degree of doneness. Vegetables should be golden and tender; lamb should be browned and slightly pink in the center.
Additional Information
Be sure not overcook the lamb or over char the vegetables.
