Directions
1 Preheat a grill or broiler.
2 Lay lamb on a cooking spray coated grill rack or baking sheet. Cook 5 minutes per side or until a meat thermometer reads 145 degrees F. Set aside in a warm place.
3 Pour oil in a small pot and heat over medium-high heat. Cook onion 5 minutes or until lightly browned.
4 Mix in garlic and cook 1 minute, stirring continually.
5 Pour in apple cider and heat until almost all the liquid is gone, scraping bottom of pot to release browned bits.
6 Stir in tomatoes, lower heat, and let simmer for 5 minutes.
7 Mix in rosemary, salt, pepper, and saffron (if desired) and let simmer for 1 minute.
8 Spoon sauce over lamb chops or serve on the side.
Additional Information
This sauce also tastes great served over rice or orzo pasta. The cooking goes quick, so be sure to keep an eye on the pot.
