Ingredients
2 frozen 10oz package mustard greens
1 lb raw ham shank
8 cup cold water
2 tbsp vegetable oil (or Crisco shortening)
2 large onion , chopped
3 medium garlic cloves
14.5 oz drained canned tomatoes , chopped
0.25 tsp hot red pepper flakes
0.25 tsp salt
1 pinch black pepper , to taste


Directions
1 Combine ham hock and water in Dutch oven. Place on med high heat. Bring to a boil.
2 Reduce heat and simmer about 1-1/2 hours, or until liquid has been reduced to about 3 cups.
3 Add greens to Dutch oven. Cover and simmer for 15 minutes. Remove cover. Simmer 30 minutes more.
4 Heat oil in large skillet on med heat. Add onion and garlic. Sauté 10 minutes or until onion is softened.
5 Stir in tomatoes, red pepper flakes, salt & pepper. Simmer 10 to 15 minutes.
6 Stir tomato mixture into greens when almost done and most of the liquid has evaporated. Simmer, uncovered, 15 minutes or until greens are tender and most of the liquid has evaporated.
