Servings
Ingredients
1 Jicama, fresh, medium , peeled and diced
0.25 cup fresh lime juice
1 pinch salt (to taste)
2 Oranges, navels, fresh, 2 7/8" , sectioned and diced
1 pinch ground cayenne (red pepper) (to taste)
2 tbsp fresh cilantro , chopped
1 Lettuce, red leaf, fresh, head (or 2 cups baby salad greens)


Directions
1 In a medium bowl, toss together the jicama, lime juice, and salt. Let sit at room temperature for one hour, tossing occasionally. Add the oranges, cayenne, and cilantro and toss. Let sit for at least 15 minutes, but preferably two hours.
2 Line a large bowl or platter with lettuce, place salad on top and serve.
Additional Information
Jicama can now be found in many grocery stores. When shopping, look for one with a smooth, firm skin without spots.
