Ingredients
1 medium onions , diced
3 fresh green onions , stalks, diced
4 medium garlic cloves , diced
0.5 tsp salt
1.5 tsp black pepper
2 tsp ground thyme
2 tsp pimiento seeds (found at West Indian supermarkets)
2 tsp light soy sauce
1 g black peppercorns
1.5 lb bottom round roast
1 tbsp olive oil


Directions
1 Mix together all ingredients except for the beef and olive oil
2 Wash the beef and pat dry. With a knife, puncture holes in the beef on all sides. Open the punctured areas so that they are approximately 1 to 1 ½ inches deep. Using your fingers, open the punctured site and put the seasoning into each hole.
3 Marinate the beef in the refrigerator for 12 to 24 hours. Once it is marinated, preheat the over to 300 degrees. Rub the olive oil on the beef and bake for approximately 45 minutes, or until done.
