Ingredients
1 lb Pork, tenderloin, lean, raw
2 tbsp olive oil
1 tbsp caribbean jerk seasoning
1 fresh mango , peeled and chopped
1 medium red bell peppers , chopped
0.67 cup orange juice
2 tsp cornstarch
0.25 tsp hot pepper sauce
2 oz fresh green onions , sliced (1/4 cup)


Directions
1 Trim fat from pork. Cut into thin strips.
2 In large skillet or wok, heat oil over medium-high until hot. Add pork and seasoning blend and stir-fry 2 minutes.
3 Add mango and bell pepper to wok. Stir-fry 2 minutes or until the pork is no longer pink.
4 In small bowl, whisk orange juice, cornstarch, and pepper sauce until smooth. Add to wok.
5 Cook 2 minutes or until the sauce has thickened, stirring frequently.
6 Add green onions, toss, and serve.
