Ingredients
1.5 lb large raw shrimp , peeled
7 oz whole pickled jalapeno peppers , reserve 1/4 cup of liquid
0.25 cup fresh lime juice
0.25 cup fresh cilantro , minced
0.25 tsp salt


Directions
1 Add shrimp to a large pot and cover with lightly salted water. Let boil. Place lid on pot and take off of heat. Let rest for 1 minute. Strain shrimp and run under cool water.
2 Slice the jalapenos in half lengthwise. Combine shrimp and jalapenos in a large bowl. Season with lime juice, cilantro, and salt and toss to coat. Cover with plastic wrap and chill for up to 1 day.
Additional Information
These are similar to cocktail shrimp, but with a spicy kick.
