1 Add shrimp to a large pot and cover with lightly salted water. Let boil. Place lid on pot and take off of heat. Let rest for 1 minute. Strain shrimp and run under cool water. 2 Slice the jalapenos in half lengthwise. Combine shrimp and jalapenos in a large bowl. Season with lime juice, cilantro, and salt and toss to coat. Cover with plastic wrap and chill for up to 1 day.

These are similar to cocktail shrimp, but with a spicy kick.
