Ingredients
2 cup fresh broccoli florets , chopped
2 cup fresh cauliflower , chopped
2 cup sliced zucchini , unpeeled
16 oz fresh tomatoes , 2 cups, chopped
0.25 cup Salad Dressing, Italian, fat free
0.75 cup Cheese, mozzarella, fat free, shredded


Directions
1 Place the broccoli, cauliflower, and zucchini in an 8-by-8 inch glass baking dish.
2 Cover, then microwave on high for 8 to 10 minutes.
3 Drain moisture, then stir in the tomatoes.
4 Pour the Italian dressing on the veggies, and sprinkle the mozzarella cheese over the top.
5 Cover, microwave on high for 3 minutes, and let set for 1 to 2 minutes.
6 Stir and serve.
