1 cooking spray
1 scallions , sliced thinly
4 eggs
2 g fresh plum tomatoes , thinly sliced
0.5 cup shredded mozzarella cheese
1 oz grated Parmesan cheese
0.12 tsp black pepper
0.12 tsp garlic powder (optional)
4 tsp fresh basil , chopped


Directions
1 Preheat broiler.
2 In medium bowl, whisk eggs, basil, garlic powder, and pepper until well blended.
3 Coat 9" oven safe sauté pan with cooking spray. Cook the scallion for about 1 minute over medium heat. Reduce heat to medium-low and add eggs.
4 Place tomato slices in top of the eggs. Sprinkle with mozzarella and parmesan cheeses.
5 Cook approximately 4 minutes, or until the bottom is cooked and the top is still creamy. Place pan under broiler for 1 minute or until the top is puffed and cooked.
6 Remove from broiler, let rest 5 minutes. Using a spatula, remove frittata to serving plate and cut into 4 pieces, or serve from skillet.
